说到黑皮诺（Pinot Noir）这个品种，你会想到什么？是"娇贵的小公主"，是"酿酒师的宠儿"，还是"可盐可甜的idol"，亦或"优雅的长公主"？赶在葡萄采收季之前，我们这个秋天的第一场品鉴会，就带大家盘一盘世界各地风格迥异的黑皮诺，以及背后酿酒师和她们的浪漫故事。

在葡道这次的品鉴会，你可以喝到17款来自7个国家不同产区的黑皮诺。了解到17家酒庄酿酒师背后的故事。

What flashes across your mind when this grape variety is mentioned? Is it a delicate little princess? Or the favorite of winemakers? Or a multi-faceted idol? Or a graceful, sophisticated princess? Before the arrival of the harvest season, we’d like to launch the first tasting party this autumn to show you the different styles of Pinot Noir from all over the world and share with you the romantic stories of the winemakers.     

Pudao welcomes you to visit our Wukang Store on August 21, 2021 to have a taste of 17 Pinot Noir wines from 7 wine producing countries and learn about the stories of the winemakers of 17 estates.

"黑皮诺（Pinot Noir）原产于法国勃艮第，是一种皮薄，喜欢偏冷凉气候的品种，也是因为葡萄皮薄，所以色素、单宁都相对较少，做出来的酒颜色偏浅，单宁较低。风味表现通常为新鲜的红色水果，例如草莓、樱桃、覆盆子、树莓等等，有些还会带有红/紫色鲜花、花丛的香气，老年份黑皮诺则会呈现出类似森林地表一样的陈年香气。"之所以说黑皮诺娇贵，也是由于黑皮诺皮薄的特性导致她特别容易染病 （皮薄还喜欢长在冷凉的地方，不容易生病才怪）。

"Pinot Noir is native to the Burgundy region of France. It is a thin-skinned variety that grows in cool climates, which therefore, contains naturally less color and tannin and makes wines of light color, with elegance and aromas of red fruits such as strawberry, cherry, cranberry and raspberry and even red/purple flowers. You might also encounter in an aged Pinot Noir the beautiful forest floor notes."

Pinot Noir is delicate because it is highly susceptible to vine diseases. (Considering its thin skin and the cold climates it grows in, it is no wonder that it gets sick quite easily).

优雅永不过时——法国勃艮第

经典中的经典，一提到黑皮诺就会想到的产区，拥有全世界最贵的黑皮诺，数不清的名庄和天才酿酒师。这里的黑皮诺从基础的"大区级"，到价格高不可攀的"特级园（Grand Cru）"从内到外都在展现两个字——优雅。

这里的黑皮诺香气内敛，没有开瓶扑鼻的香气，是那种先有一点，等一下又有新变化的惊喜，突出的是整体结构感和更丰富的层次变化。较高的酸度支撑着轻盈的酒体，像一位芭蕾舞者在你的舌尖踮起脚尖，时而惊鸿，婉若游龙。

"纯净"永远滴神——大洋洲

在大洋洲这片净土上，黑皮诺给人最直接的印象就是"纯净"。这里的大部分黑皮诺追求新鲜的感觉，复杂度在这里绝对不是唯一的标准。保持明亮酸度的同时，追求纯净的果香才是这里的风格。红色水果的香气更加集中，余味简单、干净。这里的黑皮诺价格也更加亲民，性价比超高。

高冷的另一种演绎——德国

德国的雷司令就像勃艮第的黑皮诺一样，早早的被人捧上神坛，以至于光辉掩盖了黑皮诺在德国的优秀表现。这个古老的品种在德国拥有另外一个名字——Spatburgunder，意思就是成熟比较晚的勃艮第葡萄。

在德国这个非常靠北的国家，也只有少数较温暖的地方才可以种植。黑皮诺在这里的表现通常酸度比勃艮第还要高，红色水果的香气更为内敛，酒体更加轻盈，如果说勃艮第是优雅派，德国则直接上升为高冷派。

"后浪"不容小觑——南非

一提到南非，印象里更多想到的是"皮诺塔吉（Pinotage）"这个名片级的南非品种，反而"皮诺塔吉"的亲妈——"黑皮诺"很少出现在这里。其实在南非的沃克湾（Walker Bay）也出产高品质的黑皮诺。这里有许多深受勃艮第风格影响的酿酒师在探索黑皮诺和这款土地的可能。黑皮诺在这里的表现更为成熟，在与勃艮第保持三分相似的同时，酒体趋向圆润甜美，优雅中又透着一股可爱。

谁说性感和可爱不能并存——美国加州

如果说勃艮第是奥黛丽·赫本那样的优雅派代表，加州则完全是玛丽·莲梦露那样性感派黑皮诺的存在。

在电影《杯酒人生》上映之后，美国人对于黑皮诺的喜爱更上一层楼。"它的芳香，那真是这个星球上最迷醉，最夺目，最震撼，最精致，最古老的。"——《杯酒人生》

加州的黑皮诺一口喝下去就让你想到了西海岸永远明媚的阳光。极度的甜美活泼，开瓶就是扑鼻的草莓蛋糕香气，随后喝下的每一口都像是大大的甜蜜拥抱。高酒精度，浓郁的橡木桶风味使得这里的黑皮诺更加丰满，极具辨识度，可盐可甜非她莫属。

"自然"和"黑皮诺"

除了常规的葡萄酒之外，也会有想法独特的酿酒师选择把黑皮诺用自然酒的形式表现出来，尽可能少的人工干预，最大程度的保留和展现风土对葡萄酒的影响。

Burgundy: Timeless Elegance 

Pinot Noir is often associated with Burgundy, which produces the greatest Pinot Noirs and the most expensive Pinot Noirs in the world. It is also the cradle of a myriad of famous estates and talented winemakers. From a regional appellation to a Grand Cru that is sold for an astronomical price, Pinot Noir wines made in Burgundy have been a synonym for elegance.

Their aroma is not instantly discernable as some other red wines. It is released bit by bit and varies over time. What is most impressive is the complexity in structure and flavors and aromas. The light-to-medium body with high acidity agitates your tongue like a ballerina tiptoeing or a startled wild goose flying swiftly or a dragon swimming deftly.

Oceania: An Epitome of Purity 

Pinot Noirs cultivated on the pure land of Oceania are most characteristic of a purity that is represented by the freshness of most of the Pinot Noirs there. Complexity is no longer the only or the most valued criterion. Pure fruity aroma alongside with bright acidity, instead, is the most sought-after style there. Oceanian Pinot Noir wines have a more concentrated aroma of red fruits and a simpler and purer aftertaste. They are also known for more affordable prices and remarkable quality-to-price ratio.

Germany: An Epitome of Subtlety

Riesling is to Germany what Pinot Noir is to Burgundy. It is so famous that it has outshone Pinot Noir in this country. Actually, Spatburgunder, the German name for this ancient variety, means late ripening Burgundy grapes.    

Pinot Noirs grow in only a few warmer places in Germany, which is situated in the far north. Compared with Burgundy Pinot Noirs, German Pinot Noirs usually have higher acidity, more understated aromas of red fruits and lighter body. If the former represents elegance, the latter subtlety.

South Africa: A Rising Star

Pinotage is the signature variety of South Africa. Although the fame of South Africa does not lie in Pinot Noir, Walker Bay does produce premium Pinot Noirs. A lot of winemakers who are deeply influenced by Burgundy wines are actively exploring the possibilities of cultivating Pinot Noir on the land of Walker Bay, where this variety becomes more mature. While it shares the iconic characteristics of Burgundy Pinot Noirs, it has a mellower and sweeter body and mingles elegance with a twist of briskness.

California: Sensuous and Lovely at Once 

If Burgundy Pinot Noirs are as elegant as Audrey Hepburn, then California Pinot Noirs are as sexy as Marilyn Monroe.

American people love Pinot Noirs even more after the success of the film Sideways.

A sip of California Pinot Noirs is evocative of the bright sunshine on the West Coast. They are mellow, highly distinctive and multi-faceted with an incomparable sweetness and crispness, a fragrance of a strawberry cake that greets you when you open a bottle, a pleasing taste that caresses your palate, high alcohol and rich oak barrel flavor.

Nature Pinot Noir

In addition to the regular wines, a number of avant-garde winemakers choose to make Pinot Noir wines through a natural process, which removes manual intervention and retains the impact of the terroir on the wines as much as possible.
