History of the Winery

自1830年以来，Jessiaume家族一直深深扎根于勃艮第的桑特奈（Santenay）产区。通过Jessiaume家族卓越的酿酒师们不断地努力，葡萄酒的质量随之逐年提升。当时，现任少庄主让·巴蒂斯特（Jean-Baptiste）的叔叔和父亲分别负责葡萄的种植与酿造。

The Jessiaume family has been deeply rooted in Santenay in Burgundy since 1830. Through the constant efforts of the exceptional winemakers of the Jessiaume family, the quality of the wines has improved over the years. At that time, the uncle and father of the current young owner Jean-Baptiste, were responsible for the cultivation and vinification of the grapes, respectively.

第六代传人的Jean-Baptiste看着父亲Marc酿酒长大，在2006年卖掉庄园后，两人继续经营Jessiaume好几年。后来，他们搬到了科特迪瓦的Bouzeron，接管了Domaine Chanzy，之后，Jean Baptiste于2012年从艾伦·梅多斯获得“年度年轻酿酒师”荣誉。

Jean-Baptiste Jessiaume, representing the sixth generation, grew up watching his father, Marc, make wine, and the two continued to run Jessiaume for several years after selling the estate in 2006. The pair later moved down to Bouzeron in the Côte Chalonnaise to take over Domaine Chanzy, and following that, Jean-Baptiste—who received “Young Winemaker of the Year” honors from Burghound’s Allen Meadows in 2012.

Jessiaume酒庄在伯恩丘（Cote de Beaune）和夏隆内丘（Chalonnaise）拥有无可挑剔的葡萄园地，酒庄的酒款已经相当丰富，但生产量却并不大，保持着量小质优的生产模式。

Blessed with impeccable vineyard sources in the Côte de Beaune and Chalonnaise both, the Jean-Baptiste Jessiaume lineup has grown quite large—as in, a large number of tiny-production bottlings, not a large production of bottles overall.

风土&理念

Terroir & Philosophy

酒庄所在的Santenay产区位于法国勃艮第伯恩丘产区的最南部，为大陆性气候。酒庄目前拥有来自Santenay、Rully和Chassagne Montrachet等不同产区的田块，其中一些地块的海拔在230米至300米不等。土壤类型主要为钙质粘土和石灰岩。

The Santenay appellation, where the estate is located, is in the southernmost part of the Côtes de Beaune in Burgundy and has a continental climate. The winery currently has plots from different appellations such as Santenay, Rully and Chassagne Montrachet, some of which range from 230 to 300 meters above sea level. The soil types are mainly calcareous clay and limestone.

从葡萄到酒

From Grapes to Wines

所有葡萄园的葡萄都是100%采用人工采摘的，且该酒庄最为独特的是在酒精发酵过程当中会播放音乐。他们认为可以利用音乐中正确的声波频率帮助激发酵母的活性，为葡萄酒增加复杂性的同时，同时维持酒液的平衡。

All vineyards are 100% hand-harvested and one of the most unique aspects of the winery is that music is played during the alcoholic fermentation process. The winery believes that the sound waves can help stimulate yeast activity, adding complexity to the wine while helping maintain the balance of wines.

对于白葡萄酒来说，葡萄采收后会被直接压榨而不进行破碎。在经过短暂的轻度澄清后，葡萄汁会被直接装入橡木桶中，经过15个月的熟化，其中12个月是在橡木桶中，并使用10%-15%的新橡木桶。

For white wines, the grapes are pressed directly after harvest without crushing. After a short period of light settling, the must is placed directly into oak barrels for 15 months of maturation, 12 months of which are in oak barrels with 10-15% new oak.

而红葡萄酒在采收后，会在控温条件下进行6-8天的预发酵和浸皮，而后装入大的发酵桶中，并同样经过15个月的熟化，而12个月是在橡木桶中进行。

The red wines are pre-fermented and macerated for 6-8 days under controlled temperature conditions after harvest, before being racked into large fermentation vats and likewise undergoing 15 months of maturation, 12 months of which are in oak barrels.
