现在他拥有7.7 公顷的葡萄园。完全手工采摘,酿造过程尽可能自然,采用二氧化碳浸渍法,在低温下,葡萄酒未经过滤。
After having studied with Jean François Nicq (of Foulards Rouges) at the Cave d'Estézargues, Edouard left for the Roussillon to try the adventure of natural wines on his own.
Edouard chose his terroir in altitude, to preserve fruit flavors and freshness, and avoid having too high alcohol degrees. The first visitors who came to visit him thought that his estate was located so far away from anything, that they were saying it was located at the edge of the world, thus its name in French: "Le Bout du Monde".
Now he owns 7.7 hectares of vineyard. The harvest is done by hand, the vinification is as natural as possible, in carbonic maceration, at low temperature and the wines are not filtered.
