酿造：
葡萄入庄后经轻柔去梗，整粒浆果在 8 至 10 天内进行低温浸皮（冷浸渍）。为最大程度萃取葡萄的色泽与风味，每日进行三次淋皮（Pumpovers）。随后，酒液转入法国与美国橡木桶混合陈酿 18 个月。混酿过程中加入少量梅洛（Merlot）与小西拉（Petite Sirah），以增添色泽深度与风味层次。

Vineyards：
We selected vineyards from both Alexander Valley and Dry Creek Valley for 2019 Sonoma County Cabernet Sauvignon. Each brings something unique to the finished wine. After record winter rainfall, the 2019 growing season was ideal. Harvest began slightly later than usual, producing yields of optimal quaity fruit.

Winemaker Notes:
The grapes were brought into the winery and gently destemmed. We kept the berries whole and then cold soaked on the skins between 8 and 10 days. In order to extract maximum color and flavor from the grapes, pumpovers were performed three tim es a day. The wine was then transferred to a combination of French and American oak for a period of 18 months. A small amount of Merlot and Petite Sirah were added during the blending process to bring an extra hit of color and increase the depth of flavor.

Characteristics:
Sonoma County Cabernet Sauvignon is A fruit-driven wine that's approachable and inviting. Enticing, lush aromas of black cherry, plum, and black raspberry leap from the glass. On the palate, it's round and layered with black cherry, plum, and cola flavors that unfold smoothly. Perfectly balanced, the wine's acidity structure cleverly supports its abundant fruit, making the flavor layers vivid and distinct.
